Here's what Monica writes:
I omit the shitake (my husband hates mushrooms) and have never tried it with sherry. I always add little shell or alphabet pasta that I cook separately and add upon serving.
One of the reasons this recipe is so dear to me is that I made it often for my grandmother. After she passed away I couldn't make it for a very long time.

Oooh, I love mushrooms, so I would try this with them!
My hubby hates mushrooms to...he sits and picks them out. that is so beautifully displayed in the pot!
